eating tonight: Rabo Encendido (oxtail soup)

Ingredients:

3-3 1/2 pounds oxtails, trimmed of fat, disjointed, and cut into 2-inch pieces salt and freshly ground black pepper to tastejuice of 2 limes1/2 cup pure Spanish olive oil1 large onion, finely chopped1 large green pepper, seeded and finely chopped4 cloves garlic, finely chopped1 cup drained and chopped canned tomatoes or prepared tomato sauce1/2 cup dry sherry1 cup dry red wine2 cups canned beef broth1/4 tsp. dried oregano1/4 tsp. ground cumin1/2 tsp freshly ground black pepper to taste1 bay leaf2 medium-size chorizos, or other spicy garlic sausage, sliced 1 inch thick,optional4 medium size all-purpose potatoes, peeled and quartered

 

Directions:

1. Sprinkle the oxtails with the salt, pepper, and lime juice. In a large soup kettle or casserole over medium heat, heat 1/4 cup of the oil until fragrant, then brown the oxtails on all sides. Transfer them to a platter and discard the oil. In the same kettle, heat the remaining oil over low heat until fragrant, then cook the onion, bell pepper, and garlic stirring, until tender, 6-8 minutes.2. Return the oxtails to the kettle and add everything but the potatoes. Stir well and bring to a boil over medium heat. Reduce the heat to low, cover, and simmer 2 hours. Add additional stock if needed. Add the potatoes and cook an additional 30 minutes, until the oxtails and potatoes are done, and serve hot.Makes 6 to 8 servingsThis recipe means Tail on Fire!!!

Oppose the Vet Services Tax

If a proposed state tax of 8.25% on vet care passes, no kill dogs shelters would not be able to afford vet visits and this would greatly affect how many lives they can save annually. In addition, pet owners facing economic hardship will no longer be able to afford proper pet care and more animals will likely be surrendered to shelters. If we can’t save a dog, then animal control is forced to house and eventually euthanize them. And guess who pays for that? You, the taxpayer!

the perils of power windows

I nearly killed my dog and myself today. I borrowed my husband’s fancy car and didn’t realize i left the power window function unlocked. My dog can open the window with his paw which is really cute… Today he closed it on his little neck almost strangling himself. So i’m driving and i see my little guy struggling to get his head out and he still has his paw on the button. Meanwhile i’m trying to lower the window on my side which didn’t work so i had to reach over and take his paw off the button, grab him and make eye contact with the horrified next door driver. Meanwhile, the car manages to traverse into a whole other lane and i almost hop the median into oncoming traffic. Thanks to my “anjelitos” i did not hit or maim any school children. So my apologies to the citizens of Rancho Santa Margarita. My dog was not hurt.

I drank a cup of coffee and pretty much laid down for 45 minutes i didn’t really sleep, but i did feel a bit more alert. So i was able to operate the heavy machinery at the plant without losing any limbs today. link here
